Chef Darren Anthony Lamboy
Born in Jersey City, New Jersey, Chef de Cuisine Lamboy, the second oldest of five siblings, was deeply influenced by his Puerto Rican heritage, particularly his grandmother Mercedes Mejias and mother's cooking styles. His early fascination with their ingredient improvisation and diverse dishes sparked a passion for Puerto Rican cuisine. Despite fluctuating interests, this passion persisted, leading him to pursue culinary arts at Le Cordon Bleu in San Francisco, from which he graduated in 2017. Aspiring to share his love for soulful Puerto Rican dishes, he envisioned launching his own food truck to bring his culinary creations to life, aiming to make taste buds "salsa dance" with his authentic flavors.
